- 1 cup of fresh basil
- 1 cup of fresh spinach
- 1/2 cup extra virgin olive oil
- 3 medium sized garlic cloves
- Salt and pepper to taste
- 1/3 cup parmesan cheese
Quick and Simple! Blend all ingredients together in your food processor… and presto! Its pesto!
This recipe makes about 1 cup of pesto. Pesto can be put on pasta, used to flavour veggies while cooking, as a spread in sandwiches and wraps, or mixed into homemade salad dressings.
My favourite is using it in a grilled cheese with a fix of feta and cheddar cheese. YUM!
