AMAZING! The tastiest thing I have had in a long time. I ate half a tray of these myself tonight and am not regretting it. As an app or a side dish, these are a great option. The breading is simple but tasty and easy to modify, and who doesn't love a flaky cheesy coating!

Ingredients
- 1 eggplant, enough to fill a baking sheet when sliced
- 4-5 tbsp olive oil
- 4 tbsp bread crumbs
- 4 tbsp finely shredded parmesan cheese
- 3 tsp Italian seasoning
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
Directions
- Slice the eggplant into 1/4 inch slices on a diagonal
- In a large bowl drizzle olive oil over eggplant slices and ensure all slices are coated
- In a smaller bowl combine bread crumbs, parmesan, seasoning, salt, pepper and garlic together
- Coat each slice of eggplant in the breading, ensuring both sides are coated, and place seasoned eggplant onto baking sheet
- Sprinkle half of remaining breading onto slices once all have been coated, keeping the other half of leftover breading for later
- Bake eggplant at 450 for 30 minutes, at the 20 minute mark flip slices and sprinkle with remaining breading
- Allow to cool slightly before removing from the pan
Notes
- Turn this into a spicy side dish by adding hot pepper flakes to the breading
- This same coating can substitute as a shake and bake substitute for a number of dishes
