Directions
- Boil ramen for 5-10 minutes until cooked to desired firmness and place aside in a large bowl
- In a small bowl combine ingredients for the Spicy Thai Sauce, whisk well, and set aside
- In a large skillet or frying pan, on medium heat with a small amount of olive oil, combine 2 eggs, beaten, and jalapeño to make scrambled eggs. Once cooked, set aside
- In the same pan, on medium heat and with a small amount of olive oil, sauté mushrooms, bok choy, broccoli, zucchini, and garlic
- Once veggies are cooked, stir scrambled eggs back into the pan and remove from heat
- Toss pasta to separate strands with about 2 tbsp of spicy thai sauce
- Add vegetables, egg, and remaining sauce to the bowl of pasta and toss everything together, making sure to evenly distribute vegetables and sauce
- Garnish with peanuts or chopped cilantro and serve warm
