Directions
- In a large pot, over medium heat, with a small amount of olive oil, begin to sauté jalapeños, onion, tomato paste, ginger, cumin, dijon mustard, chill powder, turmeric, garlic, paprika, thyme, bay leaf, and cinnamon
- Saute for 2 minutes and then add cabbage
- Cook cabbage with spiced until it begins to brown and turn translucent, about 5 minutes
- Add tomatoes and salt, cover pot, and cook another 3 minutes until tomatoes are soft and mushy
- Add remaining ingredients to the pot (potatoes, water, and garam masala), turn heat up to a rolling boil, cover pot and allow curry to cook for 15 minutes
- The curry will be ready when potatoes are cooked and water has reduced slightly
- Serve over rice
