I've posted a similar version of this fudge recipe, Vegan Peanut Butter Fudge, but I had to allow this mint version its own post. I cannot get enough of anything mint chocolate flavour and the cooling coconut oil and mint combo, that just melts away in your mouth is heavenly. I always keep some of this fudge in my freezer for those times I just want a little bite of something chocolatey… it seems to happen at least once everyday. I can feel good about these little indulgences too because they're healthy and saving me from going out to buy a chocolate bar or something sugarly similar. I really think the key to a healthy diet is balance.

Ingredients
- 1/2 cup coconut oil, melted
- 1/2 cup cocoa powder
- 1/2 cup smooth almond butter
- 1/4 cup honey, melted
- 1 tsp mint extract
Directions
- Melt together your coconut oil and honey in microwave or on the stove top
- Add all ingredients to your food processor and blend until fully incorporated
- Make sure to scrap down the sides and bottom of the food processor mid blend
- Pour mixd ingredients into a 9x9 baking pan and place in the freezer for at least 20 minutes in order to set
- Slice into bites and enjoy!
