I start every morning off with 3/4 cup of berries, 1/2 cup of vanilla yogurt, 1 tsp of cinnamon, and 1/4 cup of this granola. It is filled with so many great, healthy, and filling ingredients to kick start your body for the day. And the wonderful thing about it is that its super versatile, you can add or subtract anything to and from the mixture.

- Preheat oven to 275 F
- In a large bowl mix together all dry ingredients (everything excluding the honey, coconut oil, and vanilla)
- In sauce pan, over low heat, melt together the honey and coconut oil and stir to incorporate
- Once melted, stir in vanilla
- Pour hot liquid mixture over dry ingredients and stir until everything has been moistened
- Spread granola mixture onto two baking sheets, spreading out thinly will allow it to bake more thoroughly
- Bake at 275 F for 50 minutes, stirring mixture halfway through
- Once baked, remove from oven and allow to sit overnight to ensure all ingredients have dried before moving them to a sealed container. If dried properly, mixture can last on shelf for a month.
