This recipe merges my favourite Melt In Your Mouth (Healthy) Fudge with Homemade Nut Butters to create a healthy version of everyone's favourite chocolate bar. If you love Reese's then give this a try. They store great in the freezer so you can get a healthy sweet treat when ever you like.

Ingredients
- 1/2 cup coconut oil
- 1/2 cup cocoa powder
- 1/2 cup peanut butter (ideally homemade or natural)
- 1/4 cup raw honey
- 1/2 tsp vanilla
Directions
- In a sauce pan, over low heat, melt together the coconut oil, cocoa powder, honey, and vanilla
- Once melted spoon small amounts of this mixture into a mini-muffin tray-- just enough to act as the base layer to the peanut butter cups, about 1/4 cm high. Silicone mini-muffin trays work best but even with a metal tray the fudge should be able to be tapped out once done.
- Place tray in freezer for 15 minutes to allow mixture to begin to solidify
- Now, spoon a small amount of peanut butter into the centre of the fudge base layer (see picture above). This can be 1-2 tsp, depending on the size of your baking tray
- Return tray to freezer for another 15 minutes
- Finally, pour the rest of the fudge mixture into the tray to finish filling the cups and adding the sides and top layer to the peanut butter cups
- Freeze for 1 hour or until solid
- Enjoy straight out of the freezer
