Ingredients
- 1/3 butternut squash, cubed
- 1/2 large crown broccoli, chopped into bite size pieces
- 1 parsnip
- 2 large stocks bok choy, cut into bite size pieces, including stems
- 1 cup dried cranberries
- 1/4 feta, crumbled
- 2-3 tbsp honey
- 1 tsp cinnamon
- salt to taste
- olive oil for roasting
Directions
- Preheat oven to 400'F
- Prep vegetables
- Place butternut squash, parsnip, and broccoli in a pyrex baking pan, and drizzle with a small amount of olive oil; just enough to coat
- Sprinkle oiled vegetables with salt and cinnamon
- Roast for 25 minutes at 400'F
- Remove pan from oven, add bok choy and cranberries, stir, and return to oven for another 10-15 minutes until vegetables are cooked (tender but not soft)
- Once cooked, remove from oven, stir honey in, serve, and sprinkle with crumbled feta
- This dish works as a great side dish or as a tasty main served over couscous or brown rice
