These lemon dill crackers are a personal creation with a nice light flavour that allows them to go good with any dip, cheese, or charcuterie option you can think of. Crackers are really one of those staple food items that can be easy to just pick up but so worth making yourself. Homemade crackers are not only healthier but allow you to be creative by customizing your flavours of choice.

ingredients
- 1 1/2 cup whole wheat flour
- 1 1/2 cup all-purpose flour
- 1 cup liquid, 2 tbsp lemon juice and the rest water
- 1/3 cup canola or vegetable oil
- 2 tbsp dill, dry
- 2 tsp garlic, crushed (paste)
- 1 tsp black pepper
- salt for sprinkling on top
Directions
- In a large bowl mix flours, dill, and black pepper together, as well as any other dry ingredients you plan to use, like flax or bran
- Create a well in the centre of the dry mixture and add oil, water, garlic, and lemon juice
- Stir all ingredients together, starting with a fork and then using your hands once dough begins to thicken.
- Separate your dough into six sections and roll them out one at a time to the shape of your baking sheet. You want the dough rolled VERY really thin to make nice crispy crackers (1/8 - 1/16 of an inch thick).
- One at a time place cracker cheers on your baking tray to bake and with a butter knife score dough to outline the shape and size of your crackers (like a grid). Once your crackers are done, these outlines will allow you to snap them apart.
- Once scored, sprinkle dough first with water and then with salt (to taste), and bake the crackers for 13-15 minutes at 375'F.
- Crackers are finished when they begin to crisp, brown on the outside and are firm in the centre.
- Allow dough to cool on cooling racks. Once cool, snap crackers and serve.
