Pad Thai was something that I didn't actually know I liked. I had tried it once years ago, didn't like it, and haven't tried it since. Now, years later, I went out to a Thai restaurant, completely avoided the Pad Thai, and in the spirit of giving second chances tried a friends…Now, I love it.

Ingredients
For Pad Thai

tbsp lime juice, 3/4 tbsp worcestershire sauce)

Directions
- Boil Noodles as per package directions, my rice noodle vermicelli boiled for 7 minutes, until cooked to your liking
- Thinly slice all vegetables
- Stir together sauce ingredients in a small bowl and set to the side
- In a large frying pan, over medium heat, cook vegetables in a small amount of olive oil as if stir frying them, until they are cooked enough to be soft to a fork but are not mushy
- In another frying pan add a small amount of oil and begin to fry the noodles, after a couple minutes add the scrambled egg and stir egg and noodles together to allow the egg to cook while sticking to the noodles.
- Add noodles and egg to frying pan with cooked vegetables, toss all ingredients together, add in pad thai sauce, and cook for a few minutes more to allow ingredients to absorb sauce
- Dish up Pad Thai, top with peanuts, and serve
