This flavour of hummus was born out of a love of spinach and artichoke dip and a dislike for unhealthy dairy bases like sour cream. Its a fun vibrant colour and paired well with my new Lemon Dill Crackers.

Ingredients
- 1 can chickpeas
- 2 canned artichoke hearts
- 4 cloves garlic
- 1/4 cup spinach, packed
- 5-6 tbsp olive oil
- 1 tbsp lemon juice
- salt and pepper to taste
Directions
- Add all ingredients to your food processor, pulsing and then blending on high until mixture is smooth; make sure to scrape down sides of food processor as you go
- To make hummus even smoother without adding more oil add a little bit of the liquid from the canned chickpeas
