Tikka Masala is a very popular Indian dish both here and in India. This recipe holds true to an authentic Tikka Masala without having the fresh availability of spices as one would actually have in India. Tikka Masala is not a spicy curry, rather its rich in savoury flavour from the tomato base and has a lot of bright citrus taste shining through from the all the ginger.

Ingredients
- 1 crown of broccoli, cut into large pieces
- 1 yellow onion, diced
- 1 can coconut milk
- 1 can plain tomato sauce
- 1 small jalapeño, minced
- 1 tbsp ginger, grated
- 3 tsp garlic, minced
- 3 tsp garam masala
- 2 tsp cumin
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp chili powder
- 2 tbsp olive oil
Directions
- In a frying pan with a low layer of water, simmer broccoli pieces until cooked but not soft
- While broccoli is cooking, in a high-walled, large skillet, over medium heat, sauté onion in olive oil until it begins to become translucent
- To onion add jalapeño, ginger, garlic, garam masala, chill powder, and tomato sauce. Stir all spices in and allow to cook for 1-2 minutes
- Finally add to the large skillet, the cooked broccoli, coconut milk, salt, pepper, raise heat slightly and allow to simmer for 10-15 minutes before serving
