This is a great, dense, but fluffy and soft, whole wheat bread with added healthy oils from sunflower and pumpkin seeds. No bread-maker needed.

Ingredients
- 3 1/2 + 1 cup whole wheat flour
- 3 cups warm water
- 1 3/4 cup white all-purpose flour
- 1/3 cup crushed pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup wheat germ
- 1/4 cup ground flax seed
- 1/4 cup wheat bran
- 2 tsp instant yeast
- pinch of salt
Directions
- In a large bowl, mix together white flour, 3 ½ cups whole wheat flour, pumpkin seeds, sunflower seeds, wheat germ, flax, wheat bran, yeast, and salt
- Slowly add water to the mixture in parts, stirring dough as you go, and eventually mixing with your hands
- The dough will be sticky and moist, but still hold together well, 2 ½ cups of water may do so don’t worry about adding it all in. You want the dough still wet enough to take almost another cup of flour
- Transfer dough to a floured surface and start to knead as you slowly add in the remaining cup of flour during the kneading
- Need for ten minutes, shape into a ball, lightly butter, place back into your large bowl, cover with a dry tea towel and set aside to rise
- Dough should take about an hour to rise, it is ready when it has doubled in size
- Once dough has risen, punch, split into two and need each half again for 5-8 minutes on a lightly floured surface
- Shape halves into loaves and place in buttered bread pans, covered with a dry tea towel, and set aside to rise for another hour
- Once dough has again risen to double its size preheat oven to 415’F
- Bake bread for 15 minutes at 415’F and then, without opening oven, lower heat to 375’F and bake for another 30 minutes
- Bread is ready when you can knock with your knuckle on the bottom of the loaf and it sounds like a you are knocking on a hallow door. If the sound is dense and muffled, return bread to the oven
