Ingredients
- 3 cups whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 cups warm water
- 3 tbsp golden brown sugar
- 1 tbsp instant yeast
- 1 1 1/2 tbsp ground flax
- 1 1/2 tbsp wheat germ
- 1 1/2 tbsp wheat bran
- 1 tbsp salt
Directions
- Add all dry ingredients to a large bowl and mix well.
- Stir in warm water, mixing with hands as the dough thickens.
- Knead dough for 10 minutes and allow to sit in a buttered bowl, somewhere elevated and covered with a tea towel for 60 minutes to rise.
- Once risen divide dough into 8-10 balls. Knead each ball for another 6 minutes.
- Shape dough balls into bagels by rounding them, and using your thumbs, working a whole into the centre of each ball about the 1 inch in diameter.
- Set aside on baking trays, cover again with a tea towel and allow bagels to rise for another 30 minutes.
- Preheat oven to 375'F
- In a large and deep frying pan bring an inch or more of water to a rolling boil. 3 at a time, boil each bagel for 2 minutes on either side. The bagels will puff up considerably while boiling.
- Transfer boiled bagels to a greased or parchment lined baking sheet and bake in the over for 30-40 minutes.
- Bagels will be browned on the outside. Check they are baked through the same way you would check homemade bread, by flipping them over and using your knuckle to knock on the bottom of them. if they sound hollow, like knocking on a wooden door.
- Allow bagels to rest on a cooling rack and then serve warm with some butter.
